Ingredients:
2 Racks Pork Ribs
3 tbsp Pork Spice
1 tsp Ginger Powder
2 pinches Salt
2 pinches Pepper
1 tsp Cumin Powder
1 Cinnamon stick
Fresh Herbs (garlic , scallion ,bay leaves etc.)
2 cups Stock or Water
Directions
1. Start this delish recipe by separating each rib and getting rid of excess fat and skin...
Wash under cool running water with vinegar, pat dry and set aside.....
Mix all the powdered spices together and add to pork ribs....
Using your hand massage seasoning into the ribs, ensuring each rib is properly coated in the spice mix
Add fresh herbs and mix once more, cover and let chill in the fridge until the following day or let sit somewhere cool until cook time......
Bring a pan to medium high heat with some vegetable oil, add fresh garlic and ginger, Once those begin to brown add the ribs and sear each side for about a minute or two, remove from pan and place ribs..... meaty side down in an oven safe bakeware....
When all the ribs have been seared, discard the oil from pan, add the two cups stock and allow to warm until it starts to bubble....
Once the stock is warm add to the pan of ribs, place cinnamon stick and fresh herbs on top, cover and bake for an hour in the oven.
While the ribs are on the last 30 mins in the oven, its time to work on the BBQ sauce
increase heat and cook on medium heat for about 15 to 25 mins or until the sauce is thicken to your liking
Always remember to taste and adjust the flavor of the sauce as you go along.....
Once sauce is thick and delish, allow it to sit until the ribs are ready....
Remove ribs from oven and baste with two layers of the bbq sauce on each rib.....
Return to the oven with the broiler on medium heat and broil for about1 to 2 minutes (more time if you want a charred crust on the ribs) .....
Once ribs are done to your liking, remove from oven and allow to sit for 15 mins before serving on a bed of greens and some sesame seeds on top as garnish .......
