              Oven Baked Jerk Chicken

              Ackee & Saltfish

              The national dish of Jamaica is so delicious and simple to make.

              PREP TIME:6 MINS

              COOK TIME:20 MINS

              TOTAL TIME: 26 MINS

              INGREDIENTS

              1 tin grace canned ackee

              1 lb saltfish

              2 tbsp Homemade green seasoning (recipe on the website)

              1 tbsp cooking oil

              Red, yellow and green sweet peppers

              2 pinches fresh thyme

              1 tbsp Black pepper

              1 tsp Cumin powder

              1 tsp fish spice

              1 tsp all purpose powdered spice

              1 fresh scallion

              DIRECTIONS

              1. Start this awesome meal by boiling the salt-fish for ten minutes to reduce the level of salt.
                Rinse, take the skin off, take the bones out, shed the salt-fish in small pieces and set aside.
              2. Handle canned ackee with extreme caution use a tin opener to open the tin, remove the ackees from the water in the tin.
                Carefully boiling ackees with clean water for about five minutes ensure that they are not broken, drain ackee and set aside. (Get the fresh vegetables ready by thinly slicing)
              3. In a frying pan, heat oil and add the fresh vegetables.
                Allow vegetables to sauté for about 3 minutes.
                After vegetables have been sautéed add the salt-fish and further allow to sautéed for about 5 minutes.
                You will need to add 1/3 cups of water at this point and allow to simmer for five minutes.
                After five minutes, slowly add ackee and stir carefully, only twice to incorporate all the ingredients evenly among each other, cover pan and allow to simmer for 5 more minutes.
              4. After fifteen minutes of simmering this awesome meal is ready,
                So versatile can be eaten for breakfast lunch or dinner.
